IRISH SODA BREAD | |
2 c. milk 2 tbsp. vinegar 1 tsp. salt 4 c. flour 1 egg, fork beaten 1 stick butter, melted 1/2 c. sugar 2 level tsp. baking soda 1/2 box seedless raisins or less, to taste 1 tbsp. caraway seed (optional) Add vinegar to milk and set aside to become sour and slightly thick. Sift together flour, salt, sugar and soda. Raisins and caraway seed may be tossed with these dry ingredients. Fork beat egg, add melted butter and sour milk. Stir these wet ingredients into flour mixture, but stir no more than necessary. Pour batter into lightly greased and floured 9 inch baking pan. Bake in preheated oven at 350 degrees for 1 hour. Makes 1 round loaf. |
