IRISH SODA BACON BREAD | |
4 c. all-purpose flour 3 tbsp. sugar 1 1/2 tbsp. low-sodium baking powder 1 tsp. baking soda 6 tbsp. unsalted butter, cold 1 c. golden raisins 6 slices Armour Lower Salt Bacon, cooked crisp and crumbled 2 eggs 1 1/2 c. buttermilk Preheat oven to 375 degrees F. Combine flour, sugar, baking powder and baking soda in large bowl; cut in butter until mixture resembles coarse crumbs. Stir in raisins and bacon. Beat eggs slightly in small bowl; reserve 1 tablespoon egg. Add buttermilk and remaining eggs to flour mixture; stir to make soft dough. Turn out onto lightly floured surface; knead about 1 to 2 minutes, or until smooth. Shape dough into round loaf. Spray round 2 quart casserole dish with nonstick cooking spray; place dough in dish. With floured knife, cut a 4 inch cross about 1/4 inch deep on top of loaf. Brush with reserved egg. Bake about 55 to 65 minutes, or until wooden toothpick inserted into center comes out clean. (Cover loaf with foil during last 30 minutes of baking to prevent overbrowning.) Cool on wire rack 10 minutes; remove from dish. Serve with light cream cheese or honey butter, if desired. Makes 12 to 15 servings. |
