IRISH SODA BREAD I | |
4 1/2 c. flour 4 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 3 tbsp. sugar 1 tbsp. caraway seeds 1 c. currants 2 c. buttermilk Heat oven to 350 degrees. Grease and flour 9" cast iron black skillet. Mix 4 cups flour, baking powder, soda, salt, sugar and caraway seeds. Stir in currants. Add buttermilk all at once and mix with fork to form a dough. Sprinkle flour on work surface, knead dough about 5 minutes until smooth. Form into small round loaf and press into pan. Cut a cross 1/2" deep across top. Bake 1 hour until lightly browned and sounds hollow when rapped on bottom. Remove loaf to wire rack, rub with butter and sprinkle sugar on top. Cool before slicing. |
