MOTHER'S APPLESAUCE MUFFINS | |
1 c. butter 2 c. sugar 2 eggs 2 tbsp. vanilla extract 2 c. applesauce 2 tsp. baking soda 4 c. all-purpose flour 1 tbsp. ground cinnamon 1 tbsp. ground allspice 2 c. raisins (Rinse raisins, then soak raisins in very warm water - will make them nice and plump). In a large bowl, cream butter and sugar. Add eggs and vanilla. Mix well. Heat applesauce, do not boil. Stir in soda and add to butter mixture with flour, cinnamon and allspice. Stir in raisins. Fill greased muffin tins 2/3 full. Bake at 350 degrees for 20-25 minutes. Batter stores well in refrigerator for several days to allow for freshly baked muffins daily. Yield: 3 dozen. |
