APPLESAUCE MUFFINS | |
2 sticks butter, softened 1 1/2 to 2 c. sugar 2 eggs 1 tsp. vanilla 4 c. flour 3 tsp. cinnamon 1 tsp. allspice 1 tsp. ground cloves 2 tsp. baking soda 1 (16 oz.) can applesauce 1 c. nuts, chopped Some raisins or chopped dried fruit (optional) Cream together butter, sugar, egg and vanilla. Sift together flour and spices and add to creamed mixture. Stir soda into applesauce and add nuts (and fruit if used). Combine all ingredients, just until flour is moistened. Fill well-greased muffin cups of paper cups 2/3 full. Bake in preheated 400 degree oven for 15 minutes. Makes about 3 dozen. Freeze leftovers for future happy customers!! |
