MOTHER'S APPLESAUCE MUFFINS 
1 c. butter
2 c. sugar
2 eggs
2 tbsp. vanilla
2 c. applesauce
2 tsp. baking soda
4 c. flour
1 tbsp. ground cinnamon
1 tbsp. ground allspice
1 c. raisins (optional)

In a large bowl, cream butter and sugar. Add eggs and vanilla. Mix well. Heat applesauce, do not boil. Stir in soda and add to butter mixture with flour, cinnamon and allspice. Stir in raisins. Fill greased muffin tins 2/3 full. Bake at 350 degrees for 20-25 minutes.

Batter stores well in refrigerator for several days to allow for freshly baked muffins daily. Yield: 3 dozen.
