BRAN APPLE MUFFINS 
2 1/2 c. 40% Bran Flakes
1 c. milk
2/3 c. Parkay light spread
1/2 c. sugar
1 egg
1 1/2 c. flour
1 tbsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1 c. peeled and chopped apple

Combine cereal and milk; let stand until soft. Cream butter and sugar until light and fluffy. Blend in cereal and egg. Add dry ingredients until moistened. Stir in apples. Spoon into paper lined muffin cups evenly. Bake at 400 degrees for 25 minutes.

This recipe adapts easily to sugar free by substituting 1/4 cup sweetener for the sugar. You can also add 1/2 to 1 teaspoon cinnamon, 1/2 cup raisins, and 1/2 cup walnuts.

The apples can also be substituted by other fruits such as blueberries, pineapple, or dates.
