MARINATED MUSHROOMS | |
1 1/2 lbs. fresh mushrooms, cut up 1/2 c. olive oil 1/4 c. vegetable or corn oil 1/3 c. red wine vinegar 1 1/2 tsp. salt 3/4 tsp. sugar 1/2 tsp. basil 1/8 tsp. thyme 1/4 tsp. black pepper 1 bay leaf 1 garlic clove cut in half Place all of the above except mushrooms in very large frying pan. Cook over medium heat for approximately 5 minutes. Add mushrooms and stir until all are coated. Cover and simmer until mushrooms are tender. Remove bay leaf. May serve hot or cold. When serving, drain excess oil. |
