BIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 1/2 c. Wesson oil
3 eggs
1 1/2 tsp. vanilla
1 sm. can crushed pineapple
2 c. diced bananas (4 sm.)
2 c. nuts, chopped

Do not use an electric mixer. Mix by hand with large spoon. Sift dry ingredients together, then add Wesson oil, eggs, pineapple, bananas, nuts and vanilla. Bake at 350 degrees for 1 hour 10 minutes.

NOTE: Bake in a sheet cake pan. Serve plain, no icing.

This recipe can be converted into a carrot cake by using 2 cups shredded carrots instead of crushed pineapple and diced bananas. Use cream cheese icing for topping.
