CHICKEN STROGANOFF 
1/2 c. onion, chopped
1 can cream of mushroom soup
1 c. mushrooms, sliced
1 c. sour cream
2 c. chicken, diced

Simmer onion and mushroom in butter. Add remaining ingredients and heat about 10 minutes over low flame. Serve over instant rice. I use success rice - it's quick and easy. Serves 4. (I also generally double the recipe.)
