FRESH SAUCE FOR PASTA 
1 tbsp. olive oil
1 med. onion, finely chopped
3 cloves garlic, minced
1 lb. fresh tomatoes (Roma preferred), peeled, seeded & diced
1 tsp. dried oregano, crushed
1/2 tsp. dried thyme, crushed
1 tsp. dried basil, crushed
Salt & pepper to taste
1/3 c. chopped fresh parsley
1/2 tsp. balsamic vinegar
