COTTAGE CAKES WITH HOT BLUEBERRY
SAUCE
 
1 cup cottage cheese
4 fresh eggs
6 Tbsps. melted butter
1/2 cup unbleached flour

SAUCE:

2 cups blueberries
1/2 cup sugar
1 tsp. lemon juice
1/2 cup water

Mix cottage cheese, eggs and melted butter with a whisk. Fold in flour. Bake on medium griddle. Cook blueberries, sugar, lemon juice and water for 4 minutes. Add another 1/2 cup water mixed with 1 teaspoon cornstarch. Heat to boiling and serve over cottage cakes. Serve while thinking of us!
