BANANA BREAD 
1 stick butter
3/4 c. sugar
2 eggs
1 c. unbleached flour
1 tsp. baking soda
1/2 tsp. salt
1 c. whole wheat flour
3 lg. ripe bananas, mashed
1 tsp. vanilla extract
1/2 c. pecans, coarsely chopped

Preheat oven to 350 degrees. Grease a 9 x 5 x 3 inch bread pan. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Sift unbleached flour, baking soda and salt together, stir in whole wheat flour and add to creamed mixture, mixing well. Fold in mashed bananas, vanilla and pecans. Pour mixture into the prepared pan. Bake for 50 to 60 minutes or until cake tester inserted in center comes out clean. Cool in pan for 10 minutes, then on rack.
