CHEESY ONION CASSEROLE 
1 egg
1 lg. onion, diced
1/4 c. butter
1 box Jiffy corn muffin mix
1/2 c. milk
15 oz. can creamed corn
1 c. sour cream
1 c. grated Muenster cheese
2 drops Tabasco sauce
1/4 tsp. salt

Saute onion in butter and set aside. Combine muffin mix, egg, milk, corn, Tabasco. Put that mixture in greased 9 x 14 inch pan. Add sour cream, salt and half of cheese to the sauteed onion mixture; spread it over batter in pan. Sprinkle with remaining cheese. Bake at 400 degrees for 20 to 30 minutes until just firm, do not overcook. 20 plus servings.
