ZUCCHINI BAKE 
1 c. shredded sharp Cheddar cheese
1/2 c. cottage cheese
4 eggs, beaten
3 tbsp. fresh parsley
1 1/2 tsp. salt
1/4 tsp. black pepper
2 lbs. zucchini, thinly sliced
3/4 c. bread crumbs
1/4 c. grated Parmesan cheese
1/4 c. butter

Preheat oven 375 degrees. Butter shallow 2 quart baking dish. Combine first 6 ingredients in bowl and mix well. Place layer of zucchini and layer of cheese mixture. Repeat ending with cheese mixture.

Combine bread crumbs and Parmesan in small bowl. Sprinkle over casserole. Dot with butter. Tent with foil. Bake 25 minutes. Remove foil and bake until top is browned.
