POTATOES ROMANOFF 
4 med. Russet potatoes
1 c. sour cream
4 green onions, sliced
1 1/4 c. shredded sharp cheddar cheese, divided
1 tsp. salt
Dash of pepper
Sprinkle paprika on top

Cook potatoes in jackets until tender. Peel and shred. Combine shredded potatoes with sour cream, onions, 3/4 cup cheese, salt and pepper. Turn mixture into buttered 1 1/2 quart casserole. Sprinkle with remaining cheese and paprika. Bake uncovered at 350 degrees for 30 to 40 minutes. Makes 4 servings. May be assembled ahead and refrigerated until time to bake and serve.
