FAMILY FAVORITE SWISS STEAK 
1 (2 lb.) round steak
Salt & pepper to taste
1 c. flour
6 tsp. fat
1/2 c. onion, chopped
1/2 c. celery, chopped
1/4 c. green pepper, chopped
1 (No. 2) can tomatoes

Season steak with salt and pepper, dredge with flour. Saute in hot fat in heavy skillet until browned. Remove from skillet. Stir remaining flour into hot fat and cook until browned. Return steak to skillet. Add onion, celery, pepper, tomatoes and 1 cup water. Cover, simmer for 2 hours or until steak is tender, adding water, if needed.
