CROATIAN STUFFED POTATOES 
2 lg. potatoes
1/4 lb. smoke pork
1/2 lb. ground beef
2 tbsp. chopped parsley
1 tbsp. paprika
2 tbsp. chopped onion
3 tbsp. sour cream
1 egg yolk, slightly beaten
3/4 c. sour cream
2 tbsp. oil
Salt and pepper

Peel the potatoes. Wash them and hollow out the centers. Season the potatoes with salt. Chop the smoked meat. Fry the onion until lightly browned. Add parsley, salt and pepper. Remove from heat and stir in 3 tablespoons of sour cream. Add the egg yolks and chopped meats. Stuff potatoes with the meat mixture. Place the stuffed potatoes in a greased baking dish. Pour the rest of sour cream over the potatoes and bake at 375 degrees until tender, about 40 minutes.
