GORDON'S SHOYU CHICKEN 
6 pieces chicken
1/2 c. water
1 c. brown sugar
1/2 c. soy sauce
1/4 tsp. ground ginger
2 cloves garlic, crushed
2 tbsp. cooking oil

Arrange chicken in large saucepan. Add all ingredients and cook on medium heat. Occasionally turn meat and cook until chicken is tender, about 45 minutes. Serve with vegetable and rice. Sauce can be spooned over rice.

I was raised on Oahu, and this Shoyu Chicken is simply fabulous! I substituted Mirin and Sake for the water and used fresh ginger... Amazing!
