CHICKEN ORIENTAL | |
6 chicken breasts, skinned and deboned 1/4 tsp. pepper 1/8 tsp. garlic powder 1 c. UNCLE BEN'S® converted brand rice 1 c. (14 1/2 oz.) chicken broth 3 or 5 tbsp. soy sauce 1 pkg. frozen pea pods (thawed) 1 (2 oz.) jar sliced pimentos (drained) In 10 ounce skillet combine rice, chicken broth and 2 tablespoons soy sauce, and stir. Sprinkle chicken with pepper and garlic and arrange around edge of skillet over rice mixture. Bring to a boil. Cover and simmer 20 minutes. Uncover and sprinkle about 3 tablespoons soy sauce over chicken. Mix pea pods and pimentos together and place in center of skillet. Cover and remove from heat. Let stand until all liquid is absorbed, about 5 minutes. Ready to eat. |
