MARVIN'S MARVELOUS MUFFINS 
3 c. oat or wheat bran
1 c. boiling water
1 1/2 c. sugar OR 1 c. sugar and 1 c. applesauce
2 c. buttermilk
2 eggs (I use egg substitute)
1/4 c. oil (Canola Oil helps reduce cholesterol)
2 1/2 c. wheat flour
1 tsp. salt sense or other low Na salt substitute
3 good tsp. cinnamon
2 1/2 tsp. baking soda
1 to 1 1/2 c. raisins, currents, peaches, pineapple or mashed bananas
1/2 c. chopped walnuts

Put bran in a bowl and cover with boiling water; set aside. Combine remaining ingredients and add to bran mixture. Bake in muffin pans (I use paper muffin cups) at 400 degrees for approximately 15 minutes (depends on oven). Batter will keep in refrigerator in a covered container for 5 weeks.
