PEACHY OAT BRAN MUFFINS 
1 1/2 c. oat bran
1/2 c. flour
1/3 c. firmly packed brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 3/4 c. low-fat milk
1 egg, beaten
1/4 c. vegetable oil
1 can (16 oz.) light yellow cling sliced peaches, drained and chopped
1/3 c. chopped walnuts

Combine oat bran, flour, sugar, baking powder, cinnamon and salt; mix well. Combine milk, egg and oil. Add to dry ingredients; stir just enough to blend. Fold in fruit and nuts.

Fill greased muffin pan to top. Sprinkle with granulated sugar, if desired. Bake at 425 degrees, 20-25 minutes until golden brown. Makes 12 medium muffins.
