HEART FIT BRAN MUFFINS 
1 1/4 c. flour
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
2 1/2 c. Kellogg's Bran Flakes cereal
1 1/4 c. skim milk
2 egg whites
2 tbsp. vegetable oil

Stir together flour, sugar, baking powder and salt. Set aside. Measure Kelloggs Bran Flakes cereal and milk into large mixing bowl, stirring to combine. Let stand 1 to 2 minutes or until cereal is softened. Add egg whites and oil; beat well.

Stir in flour mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups. Can use baking cups. Bake at 400 degrees for 18 to 20 minutes or until golden brown. Serve warm. Yield: 12 muffins.
