LASAGNE CHICKEN 
12 oz. lasagna noodles (about 12 strips), cooked al dente
2 c. minced cooked chicken
1 c. cooked chopped spinach
1/2 lb. Mozzarella cheese, grated
1/2 tsp. aniseed, crushed
Salt and freshly ground pepper to taste
3/4 c. chicken stock

Butter a shallow baking dish and arrange 3 strips of lasagna noodles on bottom. Sprinkle 1/3 each of the chicken, spinach, cheese, and seasoning over noodles. Repeat layers twice. Pour chicken stock over mixture, cover with aluminum foil and bake in a preheated 375 degree oven for 20 minutes. Remove foil and brown top under a preheated broiler, if desired.

VARIATIONS: Substitute for the chicken any of the following: turkey, ham, veal, pork, beef, sweetbreads, chicken livers, shrimp, crab, tuna, hard cooked eggs.
