CORN COB JELLY | |
12 bright red corn cobs (white corn cobs can be used, but with a little food coloring) 3 pt. water 1 pkg. fruit pectin 3 c. sugar Select clean bright red cobs. Place in a large kettle and add 3 pints of water. Boil for 30 minutes. Remove from heat and strain. Save the liquid and throw the cobs away. You should have 3 cups of the liquid. If needed, add enough water to make 3 cups. Add the fruit pectin to this liquid and bring to a full rolling boil. Add the sugar and boil for 3 more minutes. Watch that it does not boil over. Pour into jelly jars and seal. This tastes a lot like apple, but better. |
