FRIED PORK WITH PAPRIKA 
1 1/2 lb. pork tenderloins (Sams are great)
1/4 c. olive oil
1 minced onion
3 cloves garlic, minced
1/4 c. red wine vinegar
1 bay leaf, crumbled
Pinch of red pepper
3/4 c. chicken broth
2 tbsp. minced parsley

Cut pork crosswise into 1/2" to 3/4" slices, sprinkle with paprika, salt and pepper. Saute in olive oil until thoroughly cooked. Transfer to platter. Add onions, garlic, bay leaf, pepper and saute. Add broth and vinegar to skillet. Boil about 8 minutes to reduce liquid. Return pork to heat. Transfer to plates. Sprinkle with parsley. Serves 4.
