FRIED RICE | |
1 1/2 c. long grain rice 2 lean pork tenderloins Cooking oil or bacon fat 4 med. onions 1 green pepper 3 eggs, beaten 4 tbsp. soy sauce Drop rice into cold, salted water. Bring rapidly to boil and cook over high heat until just tender. Drain and place in warm oven to dry. Cover bottom of heavy skillet with cooking oil. Add pork and brown quickly remove to boil. Cut onion and pepper rather coarsely. Add to skillet and cook gently until tender. Remove to bowl with pork and pour beaten eggs into skillet. Add more oil if needed. Cook eggs until firm. Add to bowl with pork. Add more oil to skillet and cook rice tossing constantly until brown. Add pork, vegetables and soy sauce. Toss lightly together. |
