SPANISH RICE 
1 c. rice
1 lb. sausage
1 lg. can tomato juice

Brown and crumble the sausage. Drain excess fat. Put rice and browned sausage in a 2-quart casserole. Cover with tomato juice. It may not take the whole can. Bake uncovered in 350 degree oven for 1 hour or until rice is tender.
