BANANA BRAN LOAF | |
1 3/4 c. all-purpose flour 1 c. 100% Bran cereal 2/3 c. sugar 2 3/4 tsp. baking powder 1/2 tsp. salt 1/3 c. butter 1 c. mashed ripe bananas (about 2 lg. bananas) 2 eggs, beaten 1/4 c. milk 1/2 c. raisins (optional) 1/2 c. chopped walnuts (optional) Combine first 5 ingredients in a large bowl. With pastry blender or 2 knives, cut in butter until it looks like coarse cornmeal. Add next 3 ingredients, and raisins and nuts, if desired. Mix until just blended. Put in greased 9x5x3 inch loaf pan. Bake in preheated 350 degree oven for 50 to 60 minutes. Cool in pan 10 minutes, then remove to rack to cool completely. |
