HEALTHY GREENS PASTA | |
This is a variation of Pasta Florentine that combines a lot of healthy vegetables in a thick, creamy puree. I started out making a "pea soup" and decided this would be better over pasta. 2 (15 oz. ea.) cans peas (or use fresh cooked/frozen) 1 (15 oz.) can spinach (or use fresh cooked/frozen) 1 (15 oz.) can carrots (or use fresh cooked/frozen) garlic powder onion powder (or minced onion) salt and pepper milk (a cup or so) grated Parmesan cheese Put peas, spinach and carrots into a pot. Season with garlic powder, onion powder, salt & pepper, to taste. Bring to a boil, stirring occasionally. Pour mixture into a food processor and process ingredients until smooth, adding milk during processing to make it creamy. Serve hot over fresh pasta with Parmesan cheese. My 3 year old loves it!
