MOCHI RICE CHICKEN | |
1 fryer chicken cut into sukiyaki size pieces 1/4 c. soy sauce 1/4 tsp. salt 1/4 tsp. sugar 1/4 c. sherry or white wine 3 c. regular rice, do not wash 1 c. mochi rice, do not wash 3 cans Swanson's chicken broth 2 (5.5 oz.) cans stem & pieces mushrooms 1/2 lb. bacon 2 med. onions Marinate chicken in first 4 ingredients. Stir aside. Chop bacon and onions. Fry bacon until crisp. Add onions and cook for 2-3 minutes. Add broth and mushrooms. Simmer about 5 minutes. Put in large size baking dish with rice and chicken; marinate. Cover and bake at 375 degrees for 1 hour. Serves 6-8. |
