BROCCOLI-STUFFED POTATOES 
Baking potatoes, scrubbed
1 tsp. butter
3 stalks broccoli, peeled
1 c. grated Cheddar
1/8 c. low-fat milk
1 tsp. salt
1/8 tsp. ground black pepper

Preheat oven 400 degrees or bake potatoes in microwave. Steam broccoli stalks. Chop finely.

Carefully slice potatoes in half lengthwise and scoop flesh into bowl. Add broccoli, 1/2 cup cheese, milk, salt, pepper. Mash. Spoon mixture into potato skins. Sprinkle with cheese. Melt cheese in microwave or under broiler.

Since microwave ovens vary in power, you may need to adjust your cooking time.
