1/2 c. warm water 1/3 c. instant dry milk 2 c. milk 2 tsp. salt 6 egg yolks 5 c. flour (or more) 1 tbsp. sugar 3 pkgs. dry yeast 2/3 c. lard 1/2 c. sugar Make sponge with water, 1 tablespoon sugar, dry milk, yeast, and enough flour to make sponge. Let rise. Scald milk; add lard, salt, and sugar. Let cool. Beat egg yolks and add to sponge mixture with cooled milk mixture and half the flour. Beat well; can use mixer. Add rest of flour to make soft dough. Let rise 1 to 1 1/2 hours; punch down and let rise again half. Form buns on greased pan and let rise. Fill with preferred filling and rise again a little. Bake at 400 degrees for 10 minutes. Brush with butter. |
