DILLY ARTICHOKE RICE SALAD 
2 c. chicken broth
1 c. uncooked reg. rice
1/3 c. chopped green onion
1/3 c. chopped green pepper
1/3 c. sliced olives
7 oz. jar marinated artichoke hearts, drained & chopped
1/3 c. chopped celery
1/2 c. mayonnaise
3/4 tsp. dill weed
Salt and pepper
Sliced olives

Bring chicken broth to boil. Add rice and cook over low heat for 20 minutes; cool.

Combine rice and next 9 ingredients; chill well. Serve on lettuce and garnish with sliced olives. Yield: 8-10 servings. My boys love this!
