UNCLE CHARLIE'S CORNBREAD 
1 pt. cornmeal
1 tsp. salt
3/4 pt. buttermilk
3/4 tsp. baking soda
1 egg
1 lg. spoonful melted shortening or bacon fat

Mix cornmeal with buttermilk, egg, salt and soda. Then add melted shortening to mixture. Pour into a well-greased skillet (preferably a black iron skillet) and bake at 400 degrees for 35-40 minutes.

NOTE: If desired, add some grated onions.
