CARIBBEAN PORK CHOPS WITH APPLE ISLAND SAUCE | |
2/3 c. water 1/2 c. onions, chopped 1/3 c. lemon juice 1 tbsp. vegetable oil 2 tsp. light brown sugar 2 tsp. chicken flavored instant bouillon 3/4 tsp. each: ground allspice, black pepper, cinnamon and thyme leaves 1/4 to 1/2 tsp. cayenne pepper 4 boneless pork loin chops (about 1 lb.) Combine all ingredients except meat. Place meat in a shallow dish or plastic bag. Pour marinade over meat to cover. Marinate in the refrigerator 4 hours or overnight. Remove meat from marinade; heat marinade. Grill or broil meat as desired, basting frequently with marinade. Apple Island Sauce: 1 1/2 c. chunky applesauce 1/2 c. water 2 tbsp. plus 2 tsp. sugar 2 tsp. lemon juice In a small saucepan, combine all ingredients and bring to a boil. Reduce heat and simmer 10 to 15 minutes. |
