1 c. honey 3/4 c. sugar 1 egg 1 tsp. lemon rind, grated 2 3/4 c. flour, sifted 1/2 tsp. baking soda 1/2 tsp. allspice 1 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. cloves 1/3 c. citron, diced 1/3 c. nuts, chopped 1/2 c. blanched almond halves 1/2 c. candied cherries Almonds Cherries Heat honey and cool. Stir in sugar, egg, lemon rind and juice. Add flour, spices, citron and nuts to honey mixture. Mix dough well and chill 8 hours. Roll 1/4 of dough at a time 1/4" thick. Keep remainder of dough chilled. Cut rolled dough into 2" rounds. Place on greased cookie sheet and bake at 400 degrees for 10 minutes. Decorate with almonds and cherries. Cookies can be decorated with following icing: 1/2 c. hot water 1 c. powdered sugar Combine sugar and water and cook to 230 degrees on candy thermometer. Add powdered sugar. Mix and spread on cookies. Yield: 40 cookies. |
