ALMOND CAKE 
1 1/4 c. sugar
1 egg
1 1/2 tsp. almond extract
2/3 c. milk
1 1/4 c. flour
1/2 tsp. baking powder
1 stick melted butter
slivered almonds
confectioners' sugar

Preheat oven to 350°F. Spray loaf pan with non-stick spray. Sprinkle bottom of pan with slivered almonds. Mix sugar, egg, extract and milk. Then add flour, baking powder and butter. Bake for 45 to 55 minutes or until toothpick comes out clean. Once cool sprinkle with confectioners' sugar.
