BROCCOLI PUFF 
2 pkgs. (10 oz. each) frozen chopped broccoli
1 c. Bisquick baking mix
1 c. milk
2 eggs
1/4 tsp. salt
1 c. shredded cheddar cheese

Heat oven to 325 degrees. Butter 1 1/2 quart casserole. Cook broccoli as directed on package; drain. Beat baking mix, milk, eggs and salt with hand beater or wire whisk until smooth. Stir in broccoli and cheese. Pour into baking dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour.

CORN PUFF: Substitute 2 packages (10 ounce each) frozen corn for the broccoli.

SPINACH PUFF: Substitute 2 packages (10 ounce each) frozen spinach for the broccoli.
