BECKY'S RAW APPLE CAKE 
4 c. raw diced apples
2 c. sugar
1/2 c. oil
2 eggs, well beaten
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 c. chopped nuts (optional)

Mix together apples and sugar. Add oil, well-beaten eggs, and vanilla. Mix dry ingredients and add to mixture. Pat into greased oblong 9x13 inch pan. Bake at 350 degrees for 1 hour (325 degrees for a glass pan). Top with warm sauce (see recipe below).

SAUCE:

1/2 c. butter
1/2 c. sugar
1/2 c. brown sugar
1/2 c. evaporated milk

Bring to a boil and add 1 teaspoon vanilla. Reduce heat to medium high and boil 3 minutes.
