BUTTER-FRIED POTATOES 
In frying pan melt 1/2 stick butter (1/4 cup). Add to butter, 6 medium sized boiled potatoes that have been cooked in their skins and diced and 1 diced onion. Sprinkle in 1/4 teaspoon salt and 2 tablespoons minced parsley. Cook in skillet on medium heat until potatoes brown on the bottom then lift with spatula and brown the other side of potatoes. Makes 4 to 6 servings.
