WILTED LEAF SALAD 
Lettuce (soft leaf, iceberg, etc.) or spinach
4 slices bacon, cut in 1/2 inch pieces
1/2 c. vinegar (or red wine)
1 tbsp. sugar (2 tbsp. if brown sugar or honey)
1 tbsp. dijon style mustard
Salt and pepper to taste
Optional Ingredients: Chopped green onions, sliced radishes, thin sliced celery, jicama strips, sliced mushrooms, chopped olives, garlic
Top with chopped hard-boiled eggs if desired

Place shredded lettuce in serving bowl; cover and refrigerate. Saute bacon pieces until crisp. Remove to paper towel and drain. In small skillet with bacon drippings, add vinegar (or lemon), sugar (or honey) and seasonings. Simmer over low heat until reduced. Add mustard if desired. Add bacon bits and any optional ingredients to the lettuce in bowl, then pour HOT sauce over greens. Toss and serve. Don't worry; it's supposed to be limp...but tasty.
