ZUCCHINI PARMIGIANA 
1 or 2 lbs. zucchini
Wesson oil
2 or more lbs. Parmigiana cheese (Mozzarella)
Flour
Eggs
Tomato or spaghetti sauce
Grated cheese
Pepper (black) and salt

Wash and slice zucchini thin or thick (to your taste). In a paper bag put flour, salt and pepper and a little grated cheese. Shake each piece.

In a bowl mix 2 or 3 eggs with water. Heat oil in frying pan. Dip floured zucchini into egg mixture, then into frying pan. Brown. Drain on paper bag.

In a baking dish put layer of sauce, fried zucchini, little grated cheese, Mozzarella, more sauce, etc. Bake uncovered 350 degrees for about 25 to 30 minutes. Enjoy.
