ZUCCHINI CHOCOLATE CAKE 
2 c. flour
1 tsp. each baking powder, baking soda and cinnamon
1/2 tsp. each nutmeg and salt
1/4 c. cocoa
3 eggs
2 c. sugar
1/2 c. oil
3/4 c. buttermilk
2 c. shredded unpeeled zucchini (3 or 4 med.)
1 c. coarsely chopped walnuts or pecans
1 tsp. each vanilla and grated orange peel

Stir together flour, baking powder, soda, spices, salt and cocoa. Set aside.

In large bowl of mixer, beat eggs until very light. Gradually beat in sugar until mixture is fluffy and pale ivory color. Slowly beat in oil. Stir in flour mixture, a third at a time, alternately with buttermilk and zucchini. Blend lightly but thoroughly. Stir in walnuts.
