JAMBALAYA 
2 tbsp. butter
1 lb. country ham, diced
2 lg. onions, chopped
2 garlic cloves or garlic seasoning
1 med. green pepper, cut up
4 2/3 c. can tomatoes
3 c. meat broth or 2 chicken cubes and 3 c. water
1 bay leaf
1/2 tsp. dried thyme
1/2 tsp. chili powder
1/4 tsp. pepper
2 c. rice
1 (12 oz.) pkg. frozen shrimp, cooked

I use 1 (5 oz.) can Swanson premium chicken plus the 2 chicken cubes and 3 cups water.

Melt butter in large pan. Add ham, onion and garlic; cook until lightly browned. Add remaining ingredients except rice and shrimps and bring to boil. Gradually stir in rice. Cover and simmer for 30 minutes or until rice is tender and liquid is absorbed. Add shrimp and more seasoning, if desired. Makes 6 servings.
