ITALIAN CHICKEN 
6-8 boneless chicken breast or 2 chickens, cut up
2 eggs, beaten
Oil
Parmesan Mozzarella cheese
Italian bread crumbs
1 jar Ragu pasta sauce

Dip each piece of chicken in egg, then roll in bread crumbs. Refrigerate for 1/2 to 1 hour (this helps keep the coating on). Brown in oil in frying pan, then brown very quickly. Place in baking dish and cover with Ragu sauce. Sprinkle with Parmesan or Mozzarella cheese. Bake, covered, at 350 degrees for 45 minutes or until tender.
