RED VELVET CAKE 
2 1/2 c. plain flour
1 tsp. cocoa
1 tsp. baking soda
1 tsp. salt
1 1/2 c. Crisco oil
1 c. buttermilk
2 eggs
1 tsp. vinegar
1 tsp. vanilla
1 (1 oz.) bottle red food coloring

Mix all dry ingredients. Mix all liquid ingredients. Then mix all together. Bake in 350 degree oven.

FROSTING:

1 box confectioners' sugar
1 (8 oz.) pkg. cream cheese
1 stick butter
1 c. pecans, broke in pieces
1 pkg. frozen coconut

Let cream cheese and butter stand at room temperature. Add sugar and mix well. Add coconut and spread on cake. Sprinkle with pecans.
