CHICKEN - IN - RICE SALAD 
3 tsp. oil
2 tsp. white or white wine vinegar
2 tbsp. lemon juice
1/2 tsp. sugar (optional)
1/8 tsp. dry mustard
1/8 tsp. garlic powder

Combine ingredients and mix well.

SALAD:

1 c. rice or wild rice
1 tbsp. sliced green onion
1 c. diced chicken breast
1 c. seeded grapes, cut into halves
1/2 c. pea pods, blanched and cut into halves
1/4 c. celery
Blanched and toasted almonds

Cook rice according to directions on package. Pour 2 tablespoonfuls of dressing over the warm rice. Stir in the green onion and refrigerate while preparing other ingredients. Combine rice with remaining ingredients and salad dressing. Chill. Serve in lettuce cups. May garnish with blanched and toasted almonds, if desired.
