CHICKEN - RICE CASSEROLE | |
Vegetable cooking spray 1 c. uncooked long-grain rice 4-5 oz. skinned, boned, chopped chicken breasts 1 c. water 1/2 (10 oz.) can cream of mushroom soup, undiluted 1 (1.25 oz.) pkg. dry onion soup mix Coat a 12x8x2 baking dish with vegetable spray. Place uncooked rice in bottom of dish and top with chicken. Combine water, cream of mushroom soup, and onion soup mix; stir to blend. Pour over chicken. Cover casserole and bake at 325 degrees for 1 1/2 hours or until chicken and rice are done. Yield: 8 servings. |
