SMOTHERED CHICKEN 
4 boneless chicken breasts
2 c. prepared bread crumb stuffing
2 1/2 c. assorted chopped vegetables
1/2 c. oil
1 can cream of mushroom or cream of chicken soup
4 servings prepared rice or pilaf

Place 1/2 cup stuffing in the center of each chicken breast and roll up. Place side seams down in baking dish. Drain vegetables and put in pan with chicken. Cover everything with soup and place in oven for 45 minutes. Serve on a bed of rice. Serves 4 or freeze half after cooking for a quick warm up meal. Preheat oven at 375 degrees.
